Kale Chips
Who thought of baking kale into crispy "chips"? Whoever did, they were on to something.
Wash kale and tear into bite-size pieces
Pat dry
Toss with a few drops of evoo and sprinkle with a mix of salt, garlic powder, chili powder and cumin powder
Spread out on a baking sheet in a single layer
Bake at 375ยบ for about 10-12 mins, or till slightly browning and crispy
Enjoy!

Slow Cooked Pork
I realized my pork barely ever makes it to the blog - mostly cause its gone before I realize I didn't take any pictures. Slow cooked pork is great with rice and beans, tortillas, in hamburger buns, tacos, in a pita...pretty much whatever you can think of. And the best part is that it barely requires any effort - yet tastes oh so good.
Picnic shoulder, pork butt or rib ends work best. I usually mix up all my spices and just dump it over the pork in a slow cooker and set it for at least 4-6 hours. I make up my spice mix everytime. I just add whatever I can get my hands on that day.
This one in particular has -
Chipotle in adobo
Cumin powder
Cocoa powder
Tomato puree
Salt & Pepper
A couple of other things I've experimented with are:
Tamarind paste
Red wine vinegar
Brown sugar
Coriander powder
Maple syrup
Soy Sauce
Worcestershire sauce
Garlic
Pretty much anything goes in this recipe. Just mix into a paste and pour over the meat. Come back in 6 hours and dig in!
